Tomorrow is valentine’s day (as I’m sure at least 50% of you know) but it is also my friend’s birthday (which I would find weird if any of you knew), so I made her cupcakes! They’re a little wonky (my piping bag split halfway through icing them) but hopefully they’ll taste good.
For the cupcakes: 100g self-raising flour, pinch of salt, 100g butter/margarine, 2 standard eggs (lightly beaten). Preheat oven to 180 degrees C. Sieve flour with salt, cream the butter and sugar together in a separate bowl, gradually beat in the eggs with the butter and sugar, then fold in the flour and salt. Put a heaped teaspoon or two of mixture into paper cases (i made about 16) and shove in the oven for 15-20 mins.
To ice: 75g butter and 175g icing sugar for the butter icing- cream together and pipe on in swirls, or dump on top with a spoon and use a fork for swirl patterns. Add any extras to make it extra beautiful. (use love-heart sweets or candy letters to make it valentines-y if you want)
