plum torte – dort se švestkami

Hey, I haven’t posted for a while, which I’m going to blame on the fact that I haven’t had an oven this year at uni. I’m back for the summer now, in case you hadn’t guessed! My first year has flown by ridiculously quickly, which is pretty sad- in a few short months I will be a second-year and no longer be allowed to use the excuse ‘I’m just a fresher’ when I don’t know something/ mess something up.

But anyway, on to the cake, which is much more interesting. This is a recipe from the fantastic Deb of smitten kitchen, and the original recipe is here. It’s a really easy one, and I roped my sister in to wash, cut and pit all the plums so it was even faster.

You’ll need: 125g plain flour, 1 tsp baking powder, large pinch of salt, 200g granulated sugar plus 1 to 2 tbsps, depending on sweetness of the plums, 115g unsalted butter (softened), 2 large eggs, 8 plums (the original calls for 12 but I think mine have been a bit bigger), 2 tsps fresh lemon juice,
1 tsp ground cinnamon.

Preheat oven to 160 degrees C. Cream together the butter and sugar until fluffy, then add the eggs one at a time and combine. Add the flour, baking powder and salt and combine. Spoon all the batter into a cake tin (9 inches) and arrange the plums (halved and pitted) skin side up over the top of the batter. Sprinkle the lemon juice over the top, followed by the cinnamon and sugar. Bake for about 45 mins, until you can insert a wooden skewer and it comes out free of batter. Leave to cool on a wire rack. Hide from family and friends, don’t share, eat smothered in yoghurt (the cake, that is, not you).

Potom přidáme mouku, soli, a kypřící prášek. Těsto vysypeme do plechovky a vyrovnáme povrch. Naaranžujeme švestky na vrch a posypeme citrónovou štávou, skořicí a cukrem.  Koláč pečeme asi 45 minut, dokud vrch nezhnědne. Necháme vychladnout, a schováme ode všemi. Chutná báječně s jogurtem.
