Decided to try out this recipe from smitten kitchen (I have a massive foodie crush on smitten kitchen. I have a huge folder of recipes from there bookmarked on my laptop and I swear one day I will get round to baking all of them). The original recipe calls for: 2 sticks (8 ounces) unsalted butter, at room temperature, 2/3 cup confectioners’ (icing) sugar (sifted), 2 large egg yolks, (at room temperature), a pinch of salt, 1 teaspoon vanilla or almond extract (i used vanilla), 2 cups (280 grams) all-purpose flour, 1/2 cup of dried cranberries, grated zest from 2 oranges.
Mix the butter in the food processor until it’s soft and smooth, then add the sifted icing (confectioners’) sugar and beat it again. Beat in the two egg yolks, followed by the salt, cranberries, zest and vanilla extract. Add in the flour and beat it in on a lower mixer setting if your processor has different speed settings (if not, don’t worry). Turn the dough out onto the counter, flour the surface and your hands, and separate the dough in two. gather it into two balls, wrap in plastic wrap and stick it in the fridge for about half an hour.
Take the dough out, roll it into logs (i made mine about two inches thick) and put back in the fridge (in plastic wrap again) for another 2 hours. Preheat oven to 180 degrees C (350 F) and line baking trays with baking parchment or greaseproof paper. Using a sharp knife (if it’s not sharp enough it won’t cut through the cranberry bits) cut the logs into cookies (i made them about 1cm thick) and place them on the baking trays. bake them for about 12-14 mins (this isn’t an exact science- just keep an eye on them for the last few minutes. They need to be set but not browned. Mine were starting to brown a little round the edges at about 11 mins)
When they have cooled, place half of the cookies into a plastic box. Hide this. You can now tell your family/flatmates/partner that you made cookies.
Suroviny: 230g máslo, 85g cukr moučka, 2 velké žloutka, špetka soli, 1 lžička vanilkový trest’, 280g mouka, citronová nebo pomerančová kůra (dva citrony nebo pomeranče), sušený brusinky nebo červený rybíz.
