This is the only non-Christmas-related baking post you’ll get between now and the time I go back to uni, since in a week I’ll start Christmas baking and there is no way I can justify making anything else once the house is full of cukroví and vánočka and cake and mince pies.
So here it is- really easy, tastes amazing, what else could you want? Recipe from Waitrose
Ingredients: 200g unsalted butter, softened, 225g golden caster sugar, handful fresh rosemary (helps if you give this a whizz in the blender first, so the pieces are v. v. small), 3 large eggs, 200g ground almonds, 150g self-raising flour, grated zest from 1 lemon, plus 2 tbsp juice, 10/12 apricot halves (I use tinned, but the original recipe calls for fresh), 150g icing sugar
Preheat the oven to 180 C and grease and line a baking tray (30 x 20 cm). Cream together the butter, sugar and rosemary,then add the eggs, ground almonds, flour and lemon zest. Spoon this all into the tin and use a spatula to level it off before arranging the apricot halves on top (alternate cut-side up and cut-side down). Bake for about 40 mins (may take longer or less time depending on your oven- it’s done when the cake is starting to brown on top)
Let it cool in the tin. Mix together lemon juice and icing sugar to make runny glace icing and drizzle this all over the top in criss-cross patterns. EAT IT.

Budete potřebovat: 200g šťávamáslo, 225g cukr, 3 velké vejce, 150g mouka s kypřícím práškem, čerstvou rozmarýnu, 200g mleté mandle, 5 nebo 6 merunek, rozkrájené napůl, citronová kůra, 2 lžíce citrónová šťáva, 150g cukr moučka.
Předehřejeme troubu na 180 C. Plechovku připravíme s pečícím papírem. Smícháme máslo s cukrem a s rozmarýnou, a pak přidáme vejce, mandle, mouku a citrónovou kůru. Těsto vysypeme do plechovky a vyrovnáme povrch. Naaranžujeme merunkové půlky na vrch a koláč pečeme asi 40 až 50 minut, dokud vrch nezhnědne.
Cukr moučka smícháme s citrónovou šťávou, a s polevou ozdobíme koláč. Pak se koláč dá sníst (nejlépe ve společnosti!)
